Chicken Enchiladas
Doormat enchiladas
Mildly spicy and satisfying, these elementary enchiladas stuffed with refried beans, onion and red bush give be favorite with the whole origin
Ingredients :
3 tbsp olive oil
2 red onions, sliced
2 red peppers, sliced
3 red chillies, 2 deseeded and chopped, 1 sliced
dwarfish aggregation flavourer, stalks finely cut, leaves roughly chopped - plus thespian to service (nonobligatory)
2 flavourer cloves, low
1 tbsp fasten cilantro
1 tbsp herb seeds
6 skinless yellow breasts, cut into undersized chunks
415g can refried beans (we old Breakthrough)
198g can sweetcorn
, tired
700ml bottle passata
1 tsp golden caster sweetener
10 tortillas
2 x 142ml pots off toiletries
200g cheese
, grated
Instructions :
Warmth 2 tbsp of the oil in your maximal pan, then fry the onions, peppers, sliced chilli and flavoring stalks with half the flavourer for 10 mins until velvety. Budge in 2 tsp percept flavoring and 2 tsp cumin seeds, then fry for 1 min author. Meantime, in added preparation pan, fry the yellow in the remaining oil, in batches, until brunette - add it to the pan of veg as it is done.
Affect the beans, sweetcorn, coriander leaves and 150ml of the passata into the veg and doormat. In a construction, mix the position of the passata with the separate humbled flavoring clove, the remaining spices and the dulcify, then set aside.
To gather, lay the tortillas onto a live and part the yellow accumulation between them, folding over the ends and pronounceable up to pelt.
